You have no control over your players potential. And players potential gives "aptitude points". And if one of your player gain an "aptitude point", you will be able to shape him the way you want.
You have some controls as the coach.
As the coach, you will be able to decide which exercises to do during practices. You will be able to form your lines. You will be able to motivate your players (or destroy their moral). Again, your coach comes with aptitudes. You have no control over them.
As the manager.
As the manager, you can fire your coach, you can trade players, re-sign them, manage the marketing, employees, hire new helpers. But be careful on you finance and don't exceed the Salary Cap.
